Yemen. When we think of coffee in terms of today's varietals we seem to always refer to the well known "pop stars" of coffee. Yemen is unique, not only because of its country's worn torn reputation but also as one of the first commercial coffee trading centers dating back to 1200! Processing methods are somewhat different given several middlemen through whom the cherries are often sold whole, with the beans still inside enjoying a "different" fermentation method when compared to traditional coffee wet pulping and drying methods. This is a once a year event at Bisbee Coffee Company and when this coffee is gone we will not re-order until the coffee is made available again at this quality level. The flavors we pulled from this unique coffee are earthy dark chocolate with wine and an earthy aroma.
